    Prepare the Turkey Breast

    Start by rinsing the turkey breast under cold water and patting it dry with paper towels.

    Season the Turkey

    In a bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the turkey breast, ensuring it is evenly coated.

    Marinate

    Cover the seasoned turkey breast with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.

Smoking Process

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes before smoking. This will help create smoke rather than burn quickly.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). If using a charcoal smoker, set it up for indirect heat.
