Method

Preparing the Meat

  1. 1

    Marinate the Beef

In a small bowl, combine olive oil, salt, black pepper, and chopped fresh rosemary. Mix well to create a marinade.

  2. 2

    Prepare the Garlic

Peel and crush the garlic cloves. Add them to the marinade and mix again.

  3. 3

    Coat the Beef

Place the beef tenderloin in a large resealable bag or a shallow dish. Pour the marinade over the beef, making sure it’s well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.

Cooking the Meat

  1. 4

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 5

    Sear the Beef

In a large skillet over medium-high heat, add a little olive oil. Remove the beef from the marinade and sear it in the hot skillet for about 2-3 minutes on each side until browned.

  3. 6

    Roast in the Oven

Transfer the seared beef to a baking dish and place it in the preheated oven. Roast for 20-25 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature.

  4. 7

    Rest the Meat

Once cooked, remove the beef from the oven and let it rest for about 10 minutes before slicing.

Preparing Optional Sides

  1. 8

    Prepare Asparagus

While the beef is cooking, rinse the asparagus under cold water. Trim the ends and toss them in olive oil, salt, and pepper. Spread them on a baking sheet.

  2. 9

    Roast Asparagus

Place the asparagus in the oven during the last 10 minutes of the beef cooking time. Roast until tender and slightly browned.

  3. 10

    Prepare Potatoes

Wash and chop the potatoes into bite-sized pieces. Boil in salted water for about 15-20 minutes until fork-tender.

  4. 11

    Mash the Potatoes

Drain the potatoes and return them to the pot. Mash with butter, salt, and pepper to taste.
