    Chop the green bell pepper and onion into small pieces. If the shrimp are not pre-cooked, you may want to steam or sauté them briefly until they turn pink.

    In a mixing bowl, crack 4 large eggs and add salt and black pepper. Whisk them together until fully combined.

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the chopped onion and green bell pepper. Sauté for about 3-4 minutes or until they are tender.
