    Sear the Short Ribs

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and pepper, then add them to the pot. Sear the ribs for about 4-5 minutes on each side until they are browned. Remove the ribs from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, carrots, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Deglaze and Add Liquid

    Pour in the red wine and scrape the bottom of the pot to deglaze. Let the wine simmer for about 2-3 minutes to reduce slightly. Then add the beef broth, bay leaves, thyme, and return the short ribs to the pot.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2-2.5 hours, or until the short ribs are tender and falling off the bone.

    Serve

    Once the short ribs are tender, remove them from the pot and discard the bay leaves. If desired, you can thicken the sauce by simmering it uncovered for an additional 10-15 minutes. Serve the short ribs hot, garnished with chopped fresh parsley.
