Salad Preparation

    Prepare the Vegetables

    Wash and dry the mixed greens thoroughly. Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion.

    Assemble the Salad

    In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.

    Make the Dressing

    In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.

    Toss the Salad

    Drizzle the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.

Gumbo Preparation

    Sauté the Vegetables

    In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onion, bell pepper, and celery (the 'holy trinity') and sauté until softened, about 5 minutes.

    Cook the Sausage and Chicken

    Add the sliced Andouille sausage and diced chicken breast to the pot. Cook until the chicken is browned and cooked through, about 7-10 minutes.

    Add Garlic and Spices

    Stir in minced garlic, cayenne pepper, thyme, bay leaves, salt, and black pepper. Cook for an additional minute until fragrant.

    Add Broth and Tomatoes

    Pour in the chicken broth and add the canned diced tomatoes (including juice). Bring the mixture to a boil.

    Simmer with Okra

    Reduce heat to low, add the okra, and let the gumbo simmer for 30-40 minutes, stirring occasionally.

    Serve with Rice

    Remove bay leaves before serving. Serve the gumbo over cooked rice.
