    Soak the Beans

    Rinse the red kidney beans under cold water. Place them in a large bowl and cover with water. Let them soak for at least 8 hours or overnight.

    Chop the onion, green bell pepper, celery, and garlic. Set aside.

    Slice the Sausage

    Cut the Andouille sausage into bite-sized pieces.

Cooking

    Cook the Sausage

    In a large pot over medium heat, add the sliced Andouille sausage. Cook for about 5-7 minutes until browned. Remove the sausage and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, green bell pepper, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Drain the soaked beans and add them to the pot along with the chicken broth. Stir to combine.

    Add the bay leaves, paprika, cayenne pepper, thyme, salt, and black pepper to the pot. Stir well and bring to a boil.
