    Soak the Beans

    Rinse the red kidney beans thoroughly under cold water. Soak them in a large bowl of water overnight. Drain and rinse again before cooking.

    Chop Vegetables

    Dice the onion, green bell pepper, celery stalks, and mince the garlic cloves.

    Slice Sausage

    Slice the smoked sausage into 1/4 inch thick rounds.

    Cook Sausage

    In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion, green bell pepper, and celery. Sauté for about 5-7 minutes until softened. Add minced garlic and cook for another minute.

    Add Spices

    Stir in bay leaves, paprika, cayenne pepper, thyme, oregano, salt, and black pepper. Cook for 1-2 minutes until the spices are fragrant.

    Combine Ingredients

    Add the soaked and drained red kidney beans, chicken broth, and the browned sausage back into the pot. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 45 minutes to 1 hour, or until beans are tender.

    Cook Rice

    In a separate pot, cook the long grain rice according to package instructions.

    Once the beans are tender, adjust seasoning to taste. Serve the red beans over the cooked rice.
