    Prepare the Rabbit

    Rinse the rabbit pieces under cold water and pat dry with paper towels. Season with salt and black pepper.

    Sear the Rabbit

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the rabbit pieces and sear until browned on all sides, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Herbs and Broth

    Stir in the bay leaves and thyme, then return the rabbit to the pot. Pour in the chicken broth and bring to a simmer.

    Simmer

    Cover and let the mixture simmer for about 1.5 to 2 hours, or until the rabbit is tender and fully cooked.

    Thicken the Sauce

    In a small bowl, mix the all-purpose flour with the water to create a slurry. Gradually stir this mixture into the pot, allowing it to thicken for another 10 minutes.

    Remove the bay leaves, adjust seasoning with more salt and pepper if necessary, and sprinkle with fresh parsley before serving.
