    Season the Rabbit

    In a bowl, season the rabbit pieces with salt and black pepper. Ensure all sides are coated evenly.

    Heat the Oil

    In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

    Brown the Rabbit

    Add the seasoned rabbit pieces to the skillet and brown on all sides, about 5-7 minutes. Remove the rabbit from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add the chopped onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5-6 minutes until the vegetables are softened.

    Add Rabbit Back

    Return the browned rabbit pieces to the skillet with the sautéed vegetables.

    Add Broth and Herbs

    Pour in the chicken broth and add the thyme and bay leaf. Stir to combine.

    Bring the mixture to a gentle simmer. Cover the skillet and let it cook for about 45 minutes, or until the rabbit is tender.

    Finish with Butter

    Once the rabbit is tender, remove the bay leaf and stir in the butter until melted. This will add richness to the sauce.
