Mix the Ingredients
In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

Shape the Meatballs
With your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a plate and set aside.

Sear the Meatballs
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs in batches and sear them until browned on all sides, about 5-7 minutes. Remove them from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
