    Prepare the Shrimp

    In a mixing bowl, combine the peeled and deveined shrimp with salt, black pepper, and cayenne pepper. Let it marinate for about 15 minutes.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, combine the beaten egg and milk. In a third bowl, add the cornmeal.

    Bread the Shrimp

    Dredge each marinated shrimp first in the flour, shaking off the excess, then dip in the egg-milk mixture, and finally coat with cornmeal. Ensure each shrimp is well-coated.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat. The oil should be hot enough that a breadcrumb dropped into it sizzles.

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches, being careful not to overcrowd the pan. Fry each side for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

    If desired, lightly toast the slices of white or wheat bread in a toaster or on a skillet until golden brown.

    Spread mayonnaise on one slice of bread and mustard on the other. Place a generous amount of cole slaw on the mayonnaise side, followed by 3-4 fried shrimp. Top with the mustard side of the bread.
