    Prepare the Ingredients

    Start by peeling and deveining the shrimp. Chop the onion, bell pepper, and garlic finely. Slice the okra into 1/2 inch pieces.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until they soften. Add the minced garlic and cook for an additional minute.

    Add the Okra

    Stir in the sliced okra and cook for about 3-4 minutes until they start to become tender.

    Add Tomatoes and Broth

    Pour in the diced tomatoes with their juices and add the chicken broth. Stir well to combine all ingredients.

    Add the Cajun seasoning, salt, black pepper, bay leaf, and thyme. Stir everything together.

    Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes.

    After 20 minutes, add the shrimp to the pot. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
