    Prepare the Ingredients

    Peel and devein the shrimp if not already done. Slice the okra, dice the onion, bell pepper, and mince the garlic.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Add the Okra

    Add the sliced okra to the pot and cook for an additional 3-4 minutes, stirring occasionally.

    Incorporate Tomatoes and Broth

    Pour in the diced tomatoes with their juices and the vegetable broth. Stir to combine.

    Season the Stew

    Add the Cajun seasoning, bay leaves, salt, black pepper, and red pepper flakes. Stir well to combine all the flavors.

    Simmer

    Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes.

    Add the Shrimp

    After 15 minutes, add the shrimp to the pot. Stir and cook for an additional 5-7 minutes, or until the shrimp are pink and opaque.

    Remove the bay leaves and adjust seasoning to taste if necessary.
