    Prep the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each catfish fillet in the flour, shaking off any excess.

Cooking

    Sauté the Catfish

    In a large skillet, melt 2 tablespoons of butter over medium heat. Once melted, add the catfish fillets and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.

    Make the Cream Sauce

    In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the chopped onion and sauté until translucent, about 3 minutes. Add the minced garlic and cook for an additional minute.

    Add Cream

    Pour in the heavy cream and stir well, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly thickened.

    Combine

    Return the cooked catfish fillets to the skillet, spooning the cream sauce over the top. Allow the fillets to warm through for another minute.

    Garnish and Serve

    Sprinkle with chopped parsley before serving. Serve with lemon wedges and hot sauce on the side, if desired.
