    Dice the green bell pepper, onion, and celery into small pieces. Set aside.

    In a mixing bowl, crack the large eggs and whisk them until fully combined. Season with salt, black pepper, and Cajun seasoning.

    Cook the vegetables

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced green bell pepper, onion, and celery. Sauté until the vegetables are softened, about 3-4 minutes.
