Chicken & Sausage Gumbo Recipe

    Prepare the Ingredients

    Gather all ingredients and chop the onion, green bell pepper, celery, garlic, and slice the okra. Cut the chicken thighs into bite-sized pieces and slice the Andouille sausage.

Cooking

    Make the Roux

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Sprinkle in flour slowly while stirring continuously until it reaches a dark brown color, about 10-15 minutes.

    Cook the Vegetables

    Add the diced onion, green bell pepper, and celery to the roux. Cook for about 5 minutes until softened, then add the minced garlic and cook for another minute.

    Brown the Meats

    Increase heat to medium-high and add the chicken and sausage. Cook until browned, about 5-7 minutes.

    Add Liquids and Seasonings

    Pour in the chicken broth and add canned diced tomatoes. Stir in the Cajun seasoning, bay leaves, salt, black pepper, and thyme. Bring to a boil.

    Simmer the Gumbo

    Reduce the heat to low, cover, and let it simmer for at least 45 minutes. Stir occasionally, and add sliced okra for the last 10 minutes of cooking.

    Serve

    Remove bay leaves before serving. Serve the gumbo over cooked white rice and garnish with fresh parsley and green onions.
