Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry with paper towels. Cut the fillets into smaller pieces for easier handling.

Mix the Wet Ingredients
In a mixing bowl, combine the buttermilk and egg. Whisk together until well mixed.

In another bowl, mix together the cornmeal, flour, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Coat the Catfish
Dip each piece of catfish into the wet mixture, allowing excess to drip off, then dredge in the dry mixture until well coated.

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the coated catfish pieces and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

On the bottom half of each bun, place a lettuce leaf, followed by a piece of fried catfish, a slice of tomato, a few pickles, and a generous dollop of tartar sauce.
