Cole Slaw Preparation

    Prepare the Cole Slaw

    In a large mixing bowl, combine the green cabbage and carrots.

    Mix the Dressing

    In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Combine

    Pour the dressing over the cabbage and carrots. Toss well to coat all the vegetables. Refrigerate for at least 30 minutes before serving.

Catfish Preparation

    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Coat the Fillets

    In a shallow dish, mix the cornmeal, all-purpose flour, cayenne pepper, salt, and black pepper. Dredge the catfish fillets in the mixture until thoroughly coated.

    Heat the Oil

    In a large skillet, heat the cooking oil over medium-high heat until it's hot but not smoking.

    Fry the Catfish

    Carefully place the coated catfish fillets in the skillet. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Sandwich Assembly

    Spread Condiments

    On two slices of bread, spread 2 tablespoons of mayonnaise and 1 tablespoon of mustard each.

    Assemble the Sandwich

    Place a fried catfish fillet on top of the mayo and mustard-covered bread. Top with a generous amount of cole slaw.

    Complete the Sandwich

    Top with the remaining slices of bread. Cut the sandwich in half if desired, and serve immediately.
