    Cook the Catfish

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the catfish fillets. Season with salt and black pepper. Cook for about 4-5 minutes on each side until the fish is cooked through and flakes easily with a fork. Once cooked, remove from heat and let cool.

    Prepare the Vegetables

    While the catfish is cooling, chop the cherry tomatoes in half, finely dice the red onion, and chop the cilantro. Place them in a large mixing bowl.
