Preparation Steps
- 1
Cook the Catfish
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the catfish fillets. Season with salt and black pepper. Cook for about 4-5 minutes on each side until the fish is cooked through and flakes easily with a fork. Once cooked, remove from heat and let cool.
- 2
Prepare the Vegetables
While the catfish is cooling, chop the cherry tomatoes in half, finely dice the red onion, and chop the cilantro. Place them in a large mixing bowl.
- 3
Make the Dressing
In a small bowl, whisk together the lime juice, the remaining tablespoon of olive oil, and a pinch of salt and black pepper. Adjust seasoning to taste.
- 4
Assemble the Salad
Once the catfish has cooled, flake it into bite-sized pieces and add it to the bowl with the vegetables. Pour the dressing over the mixture and gently toss to combine all ingredients well.
- 5
Prepare the Avocados
Cut the avocados in half and remove the pit. Using a spoon, scoop out some of the flesh to create a larger cavity for the salad. Save the scooped-out avocado flesh for another use or mash it and add to the salad if desired.
- 6
Serve
Spoon the catfish salad mixture into the avocado halves. Serve immediately while the avocados are fresh.
