Marinate the Catfish
In a large bowl, combine the catfish fillets with lemon juice, salt, and black pepper. Mix well to ensure the fillets are evenly coated. Let them marinate for at least 15 minutes.

In a separate shallow dish, mix together the almond flour, crushed pork rinds, paprika, garlic powder, onion powder, and cayenne pepper (if using). Stir until all ingredients are well combined.

Coat the Catfish
Remove the marinated catfish fillets from the bowl. One at a time, dredge each fillet in the prepared breading mixture, pressing gently to ensure the coating adheres well. Set aside on a plate.

In a large skillet, heat the coconut oil or avocado oil over medium-high heat. Allow the oil to get hot but not smoking.
