Method
Preparation of Dough

Activate Yeast
In a small bowl, combine warm water (110°F) with sugar and yeast. Allow it to sit for about 5-10 minutes, until foamy.

Mix Dry Ingredients
In a large mixing bowl, combine flour and salt.

Combine Ingredients
Pour the activated yeast mixture into the flour mixture. Stir until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Flavoring (Optional)

Add Blueberries
If making blueberry bagels, gently fold in fresh blueberries after the first rise.

Add Cinnamon Raisin
If making cinnamon raisin bagels, fold in raisins and ground cinnamon after the first rise.
Shaping and Boiling

Shape Bagels
Divide the dough into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center, shaping it into a bagel.

Second Rise
Place the shaped bagels on a floured surface, cover, and let rise for another 20-30 minutes.

Boil Bagels
Bring a large pot of water to a boil and add baking soda. Boil each bagel for about 1-2 minutes on each side.
Baking

Preheat Oven
Preheat your oven to 425°F (220°C).

Bake Bagels
Place the boiled bagels on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.

Remove from the oven and let cool on a wire rack before serving.
