Sauté the Base Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the onions are translucent.

Add Garlic

Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Cooking the Soup

Add Broth and Potatoes

Pour in the vegetable broth and add the diced potatoes. Bring the mixture to a boil.

Simmer with Vegetables

Once boiling, reduce the heat to low and add the chopped green beans, diced tomatoes, and bay leaf. Let the soup simmer for about 20 minutes.

Add Spinach and Seasonings

Stir in the fresh spinach, thyme, salt, black pepper, and red pepper flakes. Cook for an additional 5 minutes until the spinach is wilted.

Serving

Serve Hot

Remove the bay leaf before serving. Ladle the soup into bowls and enjoy hot.
