Prepare the Ingredients

Begin by gathering all the ingredients. Slice the corned beef into thin strips if not pre-sliced. Drain the sauerkraut and pat dry with a paper towel to remove excess moisture.

Build the Sandwich

Take 4 slices of rye bread and spread 1 tablespoon of Russian dressing on each slice. Layer on the corned beef evenly, followed by a generous portion of sauerkraut, and top with 2 slices of Swiss cheese. Finally, place the remaining rye bread slices on top.

Grill the Sandwich

In a skillet or griddle, melt 1 tablespoon of butter over medium heat. Once melted, place one sandwich in the skillet. Grill for about 4-5 minutes per side or until the bread is golden brown and the cheese is melted. Repeat for the other sandwiches, adding more butter as needed.

Once grilled, remove the sandwiches from the skillet, cut them in half, and serve hot with extra Russian dressing on the side for dipping.
