Pancake Preparation
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
Combine Wet Ingredients
In a separate bowl, whisk together the milk, egg, and vanilla extract until smooth. Melt the unsalted butter and let it cool slightly before adding it to the wet mixture.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; small lumps are okay. Gently fold in the chopped fresh strawberries.
Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or oil. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter.

In a medium bowl, pour the heavy cream and add the powdered sugar and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form, about 2-3 minutes.
Serving
Plate and Serve
Stack the pancakes on a plate, generously top with whipped cream, and add extra fresh strawberries on top for garnish. Serve immediately and enjoy!
