Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

  2. 2

    Prepare the Pancetta

In a large skillet over medium heat, add the pancetta. Cook until it becomes crispy and golden brown, about 4-5 minutes. Remove from heat and set aside.

  3. 3

    Mix the Sauce

In a bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined.

Combining Ingredients

  1. 4

    Combine Pasta and Pancetta

Add the drained spaghetti to the skillet with the pancetta (make sure the skillet is off the heat). Toss to combine, allowing the pasta to absorb the flavors of the pancetta.

  2. 5

    Add the Sauce

Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water, a little at a time, until desired consistency is reached.

  3. 6

    Season to Taste

Taste the pasta and adjust seasoning with additional salt and black pepper if necessary.

Serving

  1. 7

    Plate the Dish

Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley and extra Parmesan cheese if desired.
