Preparation

  1. 1

    Prepare the Chicken

Season the grilled chicken breast with salt, black pepper, cumin, and paprika. Grill the chicken on medium-high heat for about 6-7 minutes on each side or until fully cooked. Once cooked, slice it into strips.

  2. 2

    Chop the Vegetables

While the chicken is grilling, chop the bell peppers, onion, mushrooms, and zucchini into bite-sized pieces.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Then add the bell peppers, mushrooms, and zucchini. Cook for an additional 5-7 minutes, stirring occasionally until the vegetables are tender.

  2. 4

    Combine Chicken and Vegetables

Once the vegetables are cooked, add the sliced grilled chicken to the skillet. Stir to combine and cook for another 2-3 minutes to heat through.

  3. 5

    Baste the Eggs

In a separate pan, lightly grease it and crack the eggs into the pan. Cook until the whites are set and the yolks are still runny (or to your desired doneness).

  4. 6

    Assemble the Dish

Once the eggs are cooked, place them on top of the chicken and vegetable mixture in the skillet. Serve immediately.
