Preparing the Tortilla Chips

    Cut and Fry Tortillas

    Cut the corn tortillas into triangles. Heat the vegetable oil in a large skillet over medium heat. Once hot, fry the tortilla pieces in batches until they are crispy and golden brown, about 2-3 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Making the Ranchero Sauce

    Blend Ingredients

    In a blender, combine the tomatoes, onion, garlic, and jalapeño pepper. Blend until smooth.

    Cook Sauce

    In a medium saucepan over medium heat, pour the blended mixture. Add cumin, salt, black pepper, and chopped fresh cilantro. Simmer for about 10-15 minutes until the sauce thickens slightly.

Cooking the Eggs and Assembling

    Cook Eggs

    In a separate non-stick skillet, cook the eggs to your liking (scrambled, sunny-side up, or poached). Season with a pinch of salt and pepper.

    Assemble Chilaquiles

    In a large serving dish, layer the crispy tortilla chips. Pour the ranchero sauce generously over the chips, then top with the cooked eggs. Sprinkle shredded cheese and feta cheese over the top, followed by additional fresh cilantro for garnish.
