Prepare the Filling

    Caramelize the Pecans

    In a medium skillet over medium heat, add the pecans and brown sugar. Stir frequently until the pecans are toasted and the sugar has melted, becoming sticky, about 5-7 minutes. Remove from heat and let cool.

    Prepare the Coconut

    In the same skillet, if needed, add coconut flakes and toast lightly for 2-3 minutes until golden brown, stirring constantly to avoid burning. Remove and set aside.

    Slice the Bananas

    Peel the bananas and slice them into thin rounds. Set aside.

Assemble and Cook the Quesadillas

    Prepare the Skillet

    Heat a large skillet or griddle over medium heat and lightly grease with cooking spray or a tablespoon of butter.

    Layer the Filling

    On half of each flour tortilla, layer a generous amount of shredded cheese, followed by a portion of the caramelized pecans, toasted coconut, and sliced bananas. Fold the tortilla over to create a half-moon shape.

    Cook the Quesadilla

    Place the folded quesadilla in the hot skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with remaining tortillas.

    Prepare the Fruit Side

    While the quesadillas are cooking, prepare the fresh fruit by washing and cutting into bite-sized pieces if necessary. Combine in a bowl.

    Plate the Dish

    Once the quesadillas are cooked, remove them from the skillet and let them sit for a minute before cutting into wedges. Serve warm with a side of fresh fruit.
