Method

Prepare the Black Bean & Corn Salsa

    Combine Ingredients

    In a medium bowl, mix together the canned black beans, corn kernels, diced red onion, halved cherry tomatoes, chopped fresh cilantro, lime juice, and salt. Stir until well combined. Set aside to let the flavors meld.

Cook the Chorizo

    Brown the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook, breaking it up with a spoon, for about 5-7 minutes or until it's browned and cooked through. Remove from heat and set aside.

Scramble the Eggs

    Whisk and Cook the Eggs

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined. In the same skillet used for the chorizo, add butter over medium-low heat. Once melted, pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are fluffy and just set, about 3-4 minutes.

Assemble Tacos

    Fill Tortillas

    Warm the corn tortillas in a dry skillet or microwave until pliable. On each tortilla, layer the scrambled eggs, followed by a generous portion of the cooked chorizo, and top with the black bean & corn salsa.

    Serve the tacos immediately while warm, garnished with extra cilantro if desired.
