Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Once done, remove them from the skillet and place on a paper towel to drain excess grease.

    Sauté the Mushrooms

    In the same skillet, add olive oil if needed, and then add the mushrooms. Sauté for about 5 minutes until they are tender and slightly caramelized. Season with salt and pepper to taste.

    Prepare the Eggs

    In a mixing bowl, crack the eggs and whisk them until well blended. Add a pinch of salt and pepper.

    Chop the Chives

    Finely chop the chives and set aside for garnish.

Cooking

    Cook the Omelette

    In the same skillet used for the bacon and mushrooms, pour in the whisked eggs over medium-low heat. Let cook for about 2-3 minutes until the edges start to set.

    Add Fillings

    Once the eggs are partially cooked, crumble the cooked bacon and add it on one half of the omelette. Then, add the sautéed mushrooms, Swiss cheese, and Parmesan cheese on top.

    Fold and Finish Cooking

    Carefully fold the omelette in half over the fillings. Allow it to cook for another 2-3 minutes until the cheese is melted and the eggs are fully cooked.

Serving

    Plate the Omelette

    Slide the omelette onto a plate and sprinkle the chopped chives on top for garnish. Serve immediately.
