    Chop the Vegetables

    Dice the onion and green bell pepper into small pieces. Set aside.

    Prepare the Eggs

    In a mixing bowl, whisk together the eggs and milk until well combined. Add salt and black pepper to the mixture.

Cooking

    Sauté the Vegetables

    In a large skillet, heat olive oil or butter over medium heat. Add the diced onion and bell pepper, sautéing until they are soft and the onion is translucent, about 5-7 minutes.

    Add the Ham

    Add the diced ham to the skillet with the sautéed vegetables. Cook for an additional 2-3 minutes, stirring occasionally.

    Cook the Eggs

    Pour the egg mixture into the skillet over the ham and vegetables. Allow it to cook undisturbed for 2-3 minutes, or until the edges start to set.

    Add the Cheese

    Sprinkle the mixed cheeses evenly over the omelette. Cover the skillet with a lid and let it cook for another 2-3 minutes, or until the cheese melts and the eggs are fully set.

    Once cooked, gently fold the omelette in half and slide it onto a plate. Serve hot.
