Method

Prepare Country-Fried Steak

    Pound and Season the Steak

    Using a meat mallet, pound the beef round steak to about 1/2 inch thickness. Season both sides with salt and black pepper.

    Set Up Breading Station

    In a shallow dish, place the flour. In another shallow dish, whisk together the eggs and milk until well combined.

    Bread the Steak

    Dredge each seasoned steak in flour, shake off excess, then dip into the egg mixture, allowing excess to drip off, and finally back into the flour. Ensure a good coating.

    Fry the Steak

    In a large skillet, heat cooking oil over medium-high heat. Fry the breaded steaks for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make Sausage Gravy

    Cook the Sausage

    In the same skillet, remove excess oil, leaving about 1-2 tablespoons. Add the breakfast sausage and cook over medium heat until browned, breaking it apart as it cooks.

    Make the Roux

    Sprinkle the flour over the cooked sausage and stir to combine. Allow to cook for about 1 minute.

    Add Milk and Thicken

    Gradually add the milk, whisking continuously until the mixture thickens. Season with salt and black pepper to taste.

Prepare Eggs and Home Fries

    Cook the Home Fries

    Dice the potatoes into small cubes. In a separate skillet, heat olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 15-20 minutes until golden and crispy, stirring occasionally.

    Cook the Eggs

    In the same skillet used for the steak, add a little oil if needed and cook the eggs to your desired doneness (sunny-side up, scrambled, etc.).

    Plate the Dish

    On a plate, serve the country-fried steak topped with sausage gravy, alongside the home fries, eggs, and your choice of toast, English muffin, or biscuit.
