Omelette Preparation

    Whisk the Eggs

    In a medium bowl, crack the 4 large eggs and add 2 tablespoons of milk, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until the mixture is well combined and slightly frothy.

    Heat the Pan

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat until it's bubbling but not browned.

    Cook the Omelette

    Pour the egg mixture into the skillet. Let it cook undisturbed for about 2-3 minutes until the edges start to set. Use a spatula to gently lift the edges and allow uncooked egg to flow underneath.

Filling Assembly

    Prepare the Filling

    While the omelette is cooking, in a separate bowl, combine 1 cup of artichoke hearts (drained and chopped), 4 oz of cream cheese (softened), 1 cup of crab meat, 2 tablespoons of chopped chives, and 1 teaspoon of lemon juice. Mix until well combined.

    Add the Filling

    Once the omelette is mostly set but still slightly runny on top, spoon the filling mixture onto one half of the omelette. Carefully fold the other half over the filling.

    Finish Cooking

    Cook for an additional 2-3 minutes until the omelette is fully set and the filling is warmed through. Slide the omelette onto a plate.
