Egg Mixture

    Prepare the Egg Mixture

    In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Scramble the Eggs

    Heat a non-stick skillet over medium heat. Pour in the egg mixture and continuously stir with a spatula until the eggs are fluffy and cooked through. Remove from heat.

Home Fries

    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse under cold water and pat dry with a towel.

    Cook the Home Fries

    In a large skillet, heat olive oil over medium-high heat. Add the diced potatoes, paprika, onion powder, and salt. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and crispy. Remove from heat.

Burrito Assembly

    Cook the Bacon

    In the same skillet, cook the bacon slices over medium heat until crispy. Remove from skillet and drain on paper towels.

    Lay a flour tortilla flat on a clean surface. In the center, layer the scrambled eggs, crispy bacon (crumbled), home fries, sliced avocado, and shredded cheese. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.

    If desired, you can toast the burrito in a skillet for a minute or two on each side to make it crispy.
