Calamari Preparation

Prepare the Squid
Rinse the cleaned squid under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Coat the Squid
Dip the squid rings into the beaten egg, allowing excess to drip off, then dredge in the flour mixture until well coated.

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully place the coated squid rings in the hot oil, a few at a time, and fry for 2-3 minutes until golden brown. Remove and drain on paper towels.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.

Finish the Sauce
Stir in the chopped fresh basil just before serving.
