    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

    Mix Wet Ingredients

    In another bowl, whisk together the buttermilk, large eggs, melted butter, and vanilla extract until smooth.

    Combine Ingredients

    Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat. Add 1 tablespoon of unsalted butter or oil and let it melt, coating the surface evenly.

    Cook Pancakes

    Using a ladle or measuring cup, pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until the other side is golden brown, about 1-2 minutes more.

    Serve

    Remove the pancakes from the skillet and keep warm in a low oven while you cook the remaining batter. Serve warm with your favorite toppings such as maple syrup, butter, or fresh fruit.
