Toast the Pecans

Preheat a skillet over medium heat. Add the chopped pecans and toast for about 5-7 minutes, stirring frequently, until they are fragrant and lightly browned. Remove from heat and set aside.

Prepare the Apples

In the same skillet, add the diced apples and a sprinkle of cinnamon. Sauté for about 3-4 minutes until the apples are slightly soft. Remove from heat and let them cool.

Mixing the Batter

Combine Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, brown sugar, and salt until well combined.

Combine Wet Ingredients

In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

Mix Batter

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if there are a few lumps.

Fold in Apples and Pecans

Carefully fold in the sautéed apples and toasted pecans into the batter until evenly distributed.

Heat the Griddle

Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Cook the Flapjacks

For each flapjack, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, about another 2-3 minutes.

Serve warm, topped with a sprinkle of brown sugar and additional pecans if desired.
