Prepare the Meat Mixture
In a large bowl, combine the whole-muscle beef sirloin and lamb shoulder. Use a sharp knife to cut both meats into small cubes, approximately 1-inch in size.

Add minced garlic, chopped oregano, ground cumin, salt, and black pepper to the meat. Drizzle with olive oil and mix everything thoroughly until the meat is coated with the seasonings.

Form the Gyro Cone
Using your hands, take a portion of the meat mixture and pack it tightly into a cone shape. Repeat this process until all the meat is formed into cones. Place the cones on a baking sheet.

Cook the Gyro Cones
Preheat the oven to 375°F (190°C). Bake the gyro cones in the oven for about 45 minutes or until the internal temperature reaches 160°F (71°C).

While the cones are cooking, prepare your toppings. Slice the tomatoes and red onion, chop the parsley, and have the tzatziki sauce ready.
