Add Vinegar
Once the milk is hot, remove it from heat and slowly add the white vinegar while stirring gently. Let it sit for about 10 minutes. This will help the curds to separate from the whey.
Strain the Curds
Line a colander with cheesecloth and carefully pour the curds and whey mixture into it. Allow the whey to drain for about 10-15 minutes.
Rinse the Curds
Once most of the whey has drained, rinse the curds under cold water to remove excess acidity from the vinegar. Gather the cheesecloth edges and squeeze gently to remove more whey.
Mix with Salt and Herbs
Transfer the curds to a bowl and sprinkle in the salt and optional herbs. Mix gently with a spatula or your hands to combine.
Form the Cheese
To form the feta cheese, pack the mixture into a small container or mold lined with cheesecloth. Press down firmly to compact the cheese.
Refrigerate
Cover the cheese with cheesecloth or plastic wrap and refrigerate for at least 24 hours to help it firm up and develop flavor.
Serve
After 24 hours, your feta cheese is ready to be served. Cut into blocks and enjoy in salads, on bread, or as part of a charcuterie board.
