Gyro Preparation

    Marinate the Chicken

    In a large bowl, combine the harissa paste, olive oil, minced garlic, lemon juice, salt, and black pepper. Mix well. Add the chicken thighs to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or ideally for 2 hours.

    Cook the Chicken

    Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard any leftover marinade. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F). Once cooked, let the chicken rest for a few minutes before slicing.

    Prepare the Pita

    While the chicken is resting, warm the pita bread on the grill for about 1-2 minutes on each side until slightly charred and heated through.

    Assemble the Gyro

    Slice the grilled chicken into strips. Place a generous amount of chicken on each warmed pita. Top with sliced cucumber, diced tomato, thinly sliced red onion, crumbled feta cheese, and chopped parsley.

    Drizzle with extra harissa or olive oil if desired. Serve immediately and enjoy your spicy harissa chicken gyro!
