    Prepare the Dough

    In a large bowl, mix the ricotta, grated aged Comté, Parmesan cheese, egg, salt, black pepper, and thyme leaves until smooth. Gradually add the flour until a soft dough forms.

    Shape the Gnudi

    Dust your hands with flour and take small portions of the dough to form small dumplings, about the size of a golf ball. Place them on a floured baking sheet.

    Cook the Gnudi

    Bring a large pot of salted water to a gentle boil. Carefully drop the gnudi into the boiling water in batches. Cook until they float to the surface, about 3-4 minutes.

    Sauté with Onions

    In a skillet, melt some butter over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes. Add the cooked gnudi to the skillet and toss gently to combine.

    Serve

    Plate the gnudi and onion mixture, garnishing with additional thyme and grated Comté if desired.
