Tiramisu Base

Method

Prepare Tiramisu

    Make the Coffee Mixture

    In a bowl, combine espresso and Marsala wine. Set aside to cool.

    Prepare the Cream Mixture

    In a bowl, whisk egg yolks and sugar until thick and pale. Fold in mascarpone cheese until smooth. In another bowl, whip heavy cream until stiff peaks form, then fold into the mascarpone mixture.

    Layer the Tiramisu

    Dip ladyfinger cookies briefly in the coffee mixture and layer them in a dish. Spread half of the mascarpone mixture over the cookies. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture. Dust the top with cocoa powder. Cover and refrigerate for at least 4 hours or overnight.

Prepare Chestnut Budino

    Bloom the Gelatin

    Sprinkle gelatin powder over 2 tablespoons of cold water and let it sit for 5 minutes.

    Cook the Mixture

    In a saucepan, combine chestnut puree, milk, and sugar. Heat over medium heat until just simmering. Remove from heat and stir in bloomed gelatin and vanilla extract until dissolved.

    Chill the Budino

    Pour the mixture into individual cups or a large dish and refrigerate until set, about 4 hours.

    Serve with Whipped Cream

    Top with whipped heavy cream before serving.

Prepare Chocolate Fudge

    Melt the Ingredients

    In a saucepan over low heat, combine dark chocolate, sweetened condensed milk, and butter. Stir until melted and smooth.

    Flavor the Fudge

    Remove from heat and stir in vanilla extract. Pour into a greased dish and let cool until set, about 1-2 hours.
