    Prepare the Bone Marrow

    Preheat your oven to 450°F (232°C). Place the beef marrow bones upright in a roasting pan. Drizzle with olive oil, and sprinkle with sea salt and black pepper.

    Roast the Bones

    Roast the bones in the preheated oven for about 15-20 minutes, or until the marrow is soft and begins to separate from the bone.

    Make the Salsa Verde

    In a bowl, combine the anchovy fillets, chopped parsley, capers, minced garlic, lemon juice, and olive oil. Mix until well combined. Taste and adjust seasoning if necessary.

    Grill the Sourdough

    Brush the sourdough slices with olive oil on both sides and grill them until crispy and golden brown, about 3-4 minutes per side.

    Serve

    Remove the marrow bones from the oven. Serve the roasted bone marrow with grilled sourdough and a generous spoonful of anchovy salsa verde on the side.
