Preparation

    Cook the Forbidden Rice

    Rinse the forbidden rice under cold water. In a saucepan, combine the rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and the water is absorbed.

    Make the Black Garlic Jus

    While the rice is cooking, prepare the black garlic jus. In a small saucepan over medium heat, melt the butter. Add the black garlic cloves and sauté for 2-3 minutes until fragrant. Add the beef stock, soy sauce, and balsamic vinegar, and simmer for 10-15 minutes until slightly thickened.

    Prepare the Smoked Beef Fat Chimichurri

    For the chimichurri, mix the parsley, cilantro, shallot, red wine vinegar, smoked beef fat (or olive oil), salt, and black pepper in a bowl. Set aside to allow the flavors to meld.

Cooking the Steak

    Season the Steaks

    Season the flat iron steaks with salt and black pepper on both sides.

    Grill the Steaks

    Preheat a grill or skillet over high heat. Cook the steaks for 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

    Rest the Steaks

    Remove the steaks from the heat and let them rest for 5 minutes before slicing.

Plating

    Serve the Dish

    To serve, place a portion of forbidden rice on each plate. Slice the flat iron steak and arrange it on top of the rice. Drizzle the black garlic jus over the steak and garnish with smoked beef fat chimichurri.
