    Make the Pie Dough

    In a large bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for at least 1 hour.

    Prepare the Apple Filling

    In another bowl, combine diced apples, brown sugar, and cinnamon. Set aside to allow the flavors to meld.

    Prepare the Butterscotch Custard

    In a saucepan, whisk together the butterscotch pudding mix and milk. Cook over medium heat until it thickens, stirring constantly. Remove from heat and stir in vanilla extract. Allow to cool slightly.

    Assemble the Hand Pies

    Preheat the oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into circles (about 5 inches in diameter). Place a tablespoon of apple filling on one half of each circle, add a small spoonful of butterscotch custard, and fold the dough over to create a half-moon shape. Seal the edges with a fork.

    Egg Wash and Bake

    Beat the egg and brush it over the top of each hand pie. Place on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.

    Allow to cool slightly before serving. Drizzle with remaining butterscotch custard if desired.
