Preparation Steps

  1. 1

    Prepare the Squash

Preheat the oven to 200°C (400°F). Slice the delicata squash in half lengthwise and scoop out the seeds. Cut the halves into 1-inch wide half-moons.

  2. 2

    Season the Squash

In a large bowl, toss the squash with olive oil, salt, and black pepper until evenly coated.

  3. 3

    Roast the Squash

Spread the squash in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes or until tender and caramelized, flipping halfway through.

  4. 4

    Prepare the Speck

While the squash is roasting, slice the speck into thin strips or small pieces.

  5. 5

    Combine with Sage

In a small skillet, heat a teaspoon of olive oil over medium heat. Add the sage leaves and cook for 1-2 minutes until fragrant. Then, add the speck and cook for an additional 2-3 minutes until slightly crispy.

  6. 6

    Serve

Once the squash is done roasting, remove it from the oven and transfer it to a serving platter. Top with the speck and sage mixture, and sprinkle with grated Parmesan cheese before serving.
