1. Prepare the Rapini
Wash the rapini thoroughly and trim the ends. Bring a large pot of salted water to a boil and blanch the rapini for about 2-3 minutes until bright green and tender. Drain and set aside.
2. Prepare the Garlic
Mince the garlic cloves and set aside.
3. Grill the Rapini
Preheat a grill or grill pan over medium-high heat. Toss the blanched rapini with olive oil, minced garlic, salt, and black pepper. Grill for 5-7 minutes, turning occasionally, until slightly charred and tender.
4. Serve
Remove the rapini from the grill and drizzle with lemon juice. Serve warm topped with smoked ricotta cheese.
