Cook the Pasta
Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to the package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta cooking water.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped celery and cook for another 2-3 minutes until softened.

Add Lobster and Tomatoes
Stir in the Calabrian chili paste and preserved tomatoes. Cook for 3-4 minutes, allowing the flavors to meld. Add the lobster meat and a splash of the reserved pasta cooking water. Stir to combine and heat through.

Combine and Serve
Add the cooked tagliatelle to the skillet and toss well to combine. If the sauce is too thick, add more reserved pasta water until you reach the desired consistency. Season with salt and black pepper to taste. Serve garnished with fresh parsley.
