Cooking Instructions
- 1
Prepare the Zucchini
Slice the zucchini into thin rounds. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the zucchini and sauté until golden and tender, about 5-7 minutes. Add minced garlic and cook for another minute.
- 2
Cook the Spaghetti
Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.
- 3
Combine Ingredients
Add the drained spaghetti to the skillet with the zucchini. Toss well to combine. Gradually add reserved pasta water as needed to create a creamy sauce.
- 4
Finish the Dish
Stir in the chopped basil and grated Provolone del Monaco cheese. Season with salt and black pepper to taste. Toss everything together until the cheese melts and coats the pasta.
- 5
Serve
Serve hot, garnished with additional basil and a sprinkle of cheese if desired.
