1. Prepare the Chicken
Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels.
2. Season the Chicken
In a small bowl, mix the fennel pollen, salt, black pepper, and minced garlic. Rub this mixture all over the chicken, including inside the cavity. Drizzle olive oil over the chicken and massage it in.
3. Roast the Chicken
Place the chicken in a roasting pan and transfer it to the preheated oven. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
4. Rest and Serve
Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with fresh chicory on the side.
